Hell hound is a critter that came from Shadowrun. So that's where the name came from.

As to afterlife, they do talk about it a bit in the GM's books. They also mention it in the different Legends books and short essays on the subject. Basically, the afterlife can be many different things, and they seem to depend somewhat on the individual in question. Not completely, though, as it is possible to enter Death's domain and retreieve a fallen comrade/lover/super-important-guy.

The Passions are the physical embodiments of emotions and, well, passions that Name Givers feel. They are worshipped, but there is no central, organized religious body. The book detailing Throal discusses olzim, small groups of people organized together to revere/worship a particular Passion, but that is in the super organized dwarf kingdom, and that is the extent of the organization I've seen in ED.
There is no overkill.

Only "open fire" and "I need to reload."

It's playing to the "audience" (the players and game-masters) by using a well-known mythological short-cut to deliver a large amount of information or to setup the context of the creature. But that references to the audience's culture if it's going to be effective, not the in-game culture. Many elements of Earthdawn do this (Thera, for example, is not _exactly_ Atlantis... but it, and later hints in Shadowrun, do blend details from some of the more popular Atlantis myths of the 90s). The Harpy and Hydra both have similarities to their Greek roots, but a distinct Earthdawn take on them. Same thing for the Hell Hound...
