A lot of the problem of players interest in priests is in how they're presented in the game. We as GMs have a tendency to be very close to canon and those priestly archetypes don't make very good adventurers. They are invested in a hierarchy that adventure tends to undermine. If you introduce NPCs that aren't cut from the cloth of the church suddenly the Players begin to look at playing priests in a different way. Bring in a disillusioned alcoholic Avesti who takes very liberal liberties with the language of the gospels and tries to "redeem" a lot of women in whore houses. Bring in a backwoods-bred Brother Battle who pays lip-service to scripture but really worships violence and bein a badass. Bring in a politically savvy corrupt Sanctuary Aeon priest that believes that economic strongarm tactics and blackmail are the best medicine for a sick political system. Bring in an Indianan Jonesesque Orthodox Cannon Lecturner who is hunting down stolen Church Reliquaries.
If you want Priest PCs show the players that Priests can be played the way they want.
